I decided to do some experimenting on a lazy Post-Halloween day and these were the result! I’m all about finding healthy alternatives to everything, because I don’t believe you should compromise your health (and waistline) to enjoy things in life.
While I didn’t intend to make these vegan in the first place, I thought I would give it a try since I already had some vegan cheese and tofu sitting in the fridge.
While this recipe is a much healthier version of regular nachos, just because it’s vegan does not make it healthy. There are many products out there that are labeled vegan for marketing purposes, only to be loaded with sugar, which I believe to be just as bad for our health. What makes this recipe healthy is that with the lack of animal products there is no saturated fat, a lot more veggies, protein, and I used chips made with black beans for extra fibre. Compare these to a usual plate of nachos with at least 1,000 calories, an obscene amount of fat and carbs and hardly as much fibre and protein, you might as well give them a try 😉
Here’s the recipe:
- 1 serving of Tostitos Artisan Roasted Garlic & Black Bean Chips
- 1 serving of Beanitos Black Bean Chips
- 1/2 cup Diaya Cheddar Cheese
- 1 cup of mixed cut up bell peppers
- 1/4 cup of green onions
- 85g of firm tofu (1/4 of the package) covered with 1 teaspoon of smoked paprika
- 1 teaspoon of garlic powder
- Optional: Jalapeno peppers, olives, etc.
- 1/2 cup of Mild Salsa
- 1/2 cup of Guacamole
- 1/2 avocado
- 1/4 cup tomato
- Sea salt
- 1/4 cup red onion
- Lime juice
- 1 teaspoon paprika
Bake at 350 for 15 – 20 minutes or until cheese melts (yes, this vegan cheese can melt).
